11.分三次加入60克細砂糖,中速打發。

12.打至幹性發泡,約為9分發 。

13.取1/3蛋白加入蛋黃麵糊中切拌均勻。

14.再倒回蛋白中,快速切拌均勻。

15.將麵糊倒入模具中 ,在桌上震幾下排出裏麵的起泡 ,並可使表麵平整一些。

16.烤箱預熱150°後 ,以烤盤盛托,放入倒數第二層、烘烤50分鍾。

17.出爐倒扣,少涼後脫模即可 。

18.將戚風蛋糕一分為三片。

19.淡奶油取出搖勻倒入無水無油容器中,加入香蘭椰奶 、砂糖 ,中速打發 。

20.打發至可以裱花的狀態,約8成發。

21.將蛋糕置於盤中 ,抹薄薄一層奶油,蓋上一片蛋糕 。

22.如此反複,用奶油抹好表麵與周邊 。

23.用椰絲裝飾蛋糕體即成 。
