9.油鍋燒至6-7層熱 ，醃好的雞翅擦掉表麵的蒜蓉醃料 ，小火慢炸或者煎至表麵微微金黃色 。
10.撈起控油備用 。
11.油鍋繼續大火燒熱 ，將雞翅複炸至金黃色。撈起 ，用鍋裏的熱油再澆一次 ，控油 。
