豆腐燉雞塊的做法 :
1.將母雞洗淨剁成塊,放入沸水中氽一下 ,撈出,用沸水衝去血水備用;
2.將豆腐切成大片;
3.蔥切段 、薑切塊;
4.熟火腿切成長方片;
5.青菜心(油菜心)切成段;
6.將鍋置於旺火上 ,加入清水1500克,淨母雞塊和豆腐片燒沸;

7.用小火燉50分鍾 ,放入熟火腿片、青菜心段 、蔥段、薑塊 、精鹽 、味精、料酒 ,燉至原料入味 ,淋上香油攪勻即可。
小貼士:
1.雞腿焯水時要在涼水中放雞腿 ,這樣血水才能焯出 。
2.高壓鍋中燉時不加鹽 ,否則肉質口感不好。
