1.所有食材清洗幹淨 ，後腿肉放入沸水中煮至斷生，做法筷子輕捅可插入並沒有血水流出即可 。苦瓜
2.12煮好的後腿肉切成厚薄均勻的薄片 。
3.21蔥薑蒜切片 ，小米椒切段，做法花椒 、苦瓜白糖備用 。洋葱
4.苦瓜切片 ，美人椒切段 。
5.洋蔥切塊備用 。
6.熱鍋冷油（底油少倒一點 ，因為一會兒肥肉會出油） ，油熱後倒入肉片，炒至肥肉吐油 ，並出現燈盞窩兒。
7.將肉片推至一邊 ，調入一調羹郫縣豆瓣 ，小火炒出紅油 。
8.倒入蔥薑蒜片，小米椒 、花椒和白糖炒出香味兒 ，隨後入苦瓜片和美人椒翻炒 。
9.入洋蔥塊翻炒均勻 ，別炒久 。調入適量老抽 、料酒、醋 ，關火調入雞精後起鍋 。
